Celebrate the flavors of the season with a few recipes from the
Cellarmaster's Wife - "Just Call it Gewurz!" Cookbook!
(Free with online purchase while quantities last!)
1 1/2 lbs scallops
1 cup Gewurztraminer
1/4 cup chopped parsley
1/4 cup ginger chutney
Butter lettuce to serve
Rinse scallops. In a saucepan combine 3/4 cup wine and parsley.
Add scallops and poach 3-4 minutes. Drain.
Combine chutney with 1/4 cup wine, add to scallops and toss. Chill. Serve on butter lettuce.
1 1/2 cups cooked lobster
1 cup cooked small shrimp
2 cups cooked, diced potatoes
1 cup diced celery
1/4 cup sliced green onions
1 can white asparagus spears
Gewurztraminer mayonnaise (recipe below)
Drain asparagus spears. Combine all ingredients, except mayonnaise and lettuce, in bowl.
Toss lightly. Add mayonnaise and chill. Line a large salad bowl with Romaine lettuce leaves.
Make a mound of lobster mixture in the center of salad bowl and serve immediately.
1/4 cup Gewurztraminer wine
1 tsp salt
Fresh ground pepper
1/4 tsp dry mustard
1 cup olive oil
Place the eggs, 1/2 the white wine, salt, pepper and mustard in a food processor.
Blend at top speed and then begin adding oil one drop at a time.
Once it begins to thicken, add remaining oil in a steady stream.
When the mayonnaise becomes thick add the remaining wine and continue blending
until mixture is constant. Store in refrigerator. Makes 2 cups.
